I typically don't remember every one offhand, but once I'm in them, the familiarity jogs my brain.

As others have said, generally if it's one you don't do very often then you won't remember it until the fight begins. Then, if you've done it a couple of times, muscle memory should hopefully kick in and it'll start to fall into place.

Leveling alts calls for you to do them dozens upon dozens of times. You start to remember them after that point.

Honestly, I just remember the important parts.. Large enemies/ones with specific attacks I should try to counter, ones that hit ungodly hard.. And bosses. Other than that, every zone is basically homogenized at the basest level.

I'm not even to Heavensward content, and I'm well past the point of being able to keep track. I haven't been able to bring myself to roll a roulette recently out of fear that I'll royally screw up because I forgot everything.
I'm not a HW yet either, and I also hardly do roulette. Whether I've run a dungeon only once or multiple times, what helps me enter the queue is knowing that I have been through it before, and will pick up things along the way. It's casual, and most people go into DF not expecting optimal play. They expect you to try, and not deliberately screw up, but never remember every single dungeon you've ran. Also, casual dungeons are a lot of rinse and repeat. For a few of them, the final boss is often a combination of mechanics thrown at you from previous encounters.

On a last note, it is perfectly ok to tell your group at the beginning that you haven't been in that particular instance for a while, don't remember it, or have only done it once or twice. Just because the message doesn't show up that someone is new to the instance, doesn't mean everyone is familiar with it. Most groups will charge into a fight assuming everyone does unless someone speaks up.

don't worry about this, most of the things in roulettes are very simple, and if the absolute worst happens (you forgot everything and somehow die instantly) most of the things in the roulettes could still be finished anyway

That is the typical priority, though that can shifted around to ignoring AoE, ignoring adds, etc etc. Most added things are minor for the most part, and as others mentioned just comes down to muscle memory.
With gear you can pretty much skip adds when the boss at 10% and lower HP. I get pretty upset seeing people switch off the boss when you can kill him before the next add wave ><.

Most of time you will see already known mechanics, then you just mainly have to remember what is really specific in this or that fight. You don't have to know the whole fight, only what can lead to a whole party wipe and avoid it.
