For a beginner wanting to try tanking at later levels, I see a lot of players recommending Gladiator and Paladin. Should I learn both Gladiator and Conjourer and move to Paladin, or just train up Gladiator and get a warrior job stone?

At level 30, whichever class you're leveling, it's a good idea to move on to the job, since it has its special job abilities and is much more powerful. At least don't enter dungeons or other group content as a class after level 30.
If you're most interested in Warrior, you can just focus on leveling Marauder and then moving to Warrior at level 30. Just make sure to get the important cross-class skills from Paladin for your Warrior (Provoke at 22 is a must, the highest level useful cross-class skill is Awareness at 34). From Pugilist you'll want at least Internal Release (level 12).
The reason many suggest Paladin as your first tanking job is that it's definitely the simplest one. But if you prefer Warrior, there's no reason not to go with it.![]()
