Also, crafted gear isn't very widely used in this game, so if you're just planning to level crafters to make yourself gear, you shouldn't bother. It's mainly used by the players going for world firsts right as a new patch has come out before it's replaced by tomestone and raid gear. Of course selling those pieces can be highly profitable, but it requires a very big investment in your crafting class levels and gear (gearing crafter and gatherer classes is at least as time consuming if not even more so than gearing your battle classes).

I will dispute this. Crafted gear is very widely used during the levelling process and for alternate classes because the game restricts your gear progression of your main class.
