If you have 5 "useless" materia, bring them to the goblin in Central Thanalan and combine them. You will get another random V materia, which could be very useful.
There is also a chance of getting a V materia by combinging 5 IV materia. I've gotten at least 10 V this way before there was Mhach.

Equipping any materia to any piece of gear will increase the spiritbond rate and increase chance of successful desynth as well. But, of course, grade I materia are preferable because they are so cheap.

I heard that people would meld crafting gear with main stats and then use that to kill stuff faster (like urth's font). However, at this point, the amount of main stat you lose by equipping a piece of crafting gear instead of normal gear is way too high to be made up with materia, especially now that you can't overmeld main stats.
I think its mainly there for sake of complement. If it wasn't, people would likely complain, that it isn't there. On the other hand, it can be usefull if you wan't to play a BLM or SMN who can decently heal himself. If this would be fun or efficient is another matter, but I thought for some time about this, as think it is a shame, that dps classes have almost no means to heal themself, making them hard to use for soloing contend that isn't supposed to be soloed.
I suppose you could meld MND onto VIT accessories....
Otherwise take them to the gobbie.
Of the primary stat materia (Str, Vit, Dex, Int, Mnd) only Str and Vit have any real use.
Any tank worth his/her salt will meld Str to their Vit accessories.
Raiders may meld Vit to their non-tank accessories in order to boost their HP, enabling them to survive just a little bit longer.
Otherwise, no use for the primary stat materia.
On another note, given the availability of grade IV materia through beast tribes now, and grade V through Mhachi matter/demimatter and PotD, is there any reason to hold on to grade I - III materia? We've already had the stat mod step on the anima questline so no chance of the Zodiac scroll melding mess.
I have a lot of grade 1-3 materia, and I don't know what to do with them too! i actually did that back in 2.0 xD i did not liked the look of the healer earrings, but the glamour system was not implemented at that time. so i got the ilvl 70 tank earrings for my healer and melded them with mind materia ^^
