The reason: it is only a name for different creatures. Which is proving that this "real one" - storry isnt true to. Thumbs up for this "creativity".

This page displays Bahamut's appearance in many different Final Fantasy games. Each Final Fantasy game is an entirely new world. The Bahamut in Final Fantasy I has nothing to do with the Bahamut in Final Fantasy IV, or X, or XIII. They are all totally different creatures, not the same creature reborn. None of them have anything to do with Bahamut in Final Fantasy XIV, this game.
This page is also out of date. It does not mention Bahamut's appearance in Final Fantasy XIV at all.
In Final Fantasy XIV, this is Bahamut's story:
He started out as one of Midgardsormr's seven children, and was the lover and beloved of Tiamat, one of Midgardsormr's other children. Thousands of years ago, the Allagan Empire invaded Bahamut's and Tiamat's home in Meracydia. They and their brood tried to defend their home, but the Allagans were too powerful. They killed Bahamut. The Ascians contacted Tiamat, and offered her a method to resurrect Bahamut as a Primal. Tiamat, in her grief, agreed, and soon regretted it. The Primal Bahamut, while very powerful and a vengeful protector of her people, was not truly her lost mate, and did not have Bahamut's soul. Even worse, the Ascians then turned around and taught the Allagans how to safely capture and contain Primals, which the Ascians then used to trap Bahamut in the red moon, Dalamud. The Allagans finished conquering Meracydia, and captured Tiamat as well, binding her in a prison in the floating research facility known as Azys Lla.
The Primal Bahamut remained trapped in Dalamud for thousands of years, long after the Allagan Empire collapsed. Eventually, a Garlean Legatus known as Nael Van Darnus managed to summon Dalamud to Eorzea, planning on ramming the moon into the continent to kill everyone there. While his plan failed, Bahamut took advantage of the situation to break free. While the Allagans were all long gone, Bahamut was still very angry, and planned to wipe out every human on the planet in revenge for what happened to his people. Fortunately, the Archon Louisouix was able to defeat Bahamut - or so it seemed.
In actuality, Bahamut managed to survive, though he was badly broken. The scattered fragments of Dalamud began to reconstruct him. Shutting down the fragments of Dalamud before they can bring Bahamut back - that's what the raid known as the Binding Coil of Bahamut is all about.
