When I go to sell something the value shows a P instead of a Gil. I a P the same value and a Gil?

That's the symbol for gil, like $ for dollars.

Specifically, it's the letter 'G' for 'gil' rendered in the special Eorzean font which appears as the style of writing used in-universe by Eorzeans. As Naria said, it's basically the symbol for the gil, as in past FF games the symbol for the currency was just the letter G, so FFXIV has followed suit.
