Yea.. it does seem like it would be hard to balance.....
You could make the point at which you get the half damage, resist and absorb be super insanely high in your elemental attributes so it would be virtually impossible without triple fire resist materia on all applicable gear, jewelry and electrum circlets just to get to half damage or even resist

What about healing the undead to kill them? I thought that was even more of a staple of the final fantasy games

Enemies that absorbed elements were extremely rare till later in FF11's life. In fact I think the only enemy that absorbed anything (and even then it was situational) might have been a single storyline boss until Treasures of Aht Urgahn was released. I'd imagine its some kind of MMO balance issue or something.

I don't think it's really necessary except for special enemies, and even then it really isn't any kind of difficulty factor unless the enemy shifts elements like Flan/puddings do. Once you learned enemy X absorbs fire you would stop using it and then it's a non-issue. It works in offline RPGs where you are fighting unknown enemies in a new area or the enemies are designed to take advantage of certain party members to make them tougher to defeat because of it.
