Sorry if that sounds confusing, basically I like the look of my current gear but I have gear that has better stats so is there a way for me to have the best of both worlds here and keep the look but still be at my best

Glamour.
Unlocked at level 50.
You have to look ridiculous like we did when we leveled ;P

Welcome!
As Anubis above mentioned, the glamour system which allows you to change the appearance of gear is unlocked by a quest in Revenant's Toll in Mor Dhona once you reach level 50, specifically this quest.
Before that point, you can at least have some control of your gear's appearance by changing it's colour (not all gear allows this though - dyeable gear is shown on the character screen/inventory with it's icon having a small circle in the top right corner. If it has this circle it's dyeable, as this shows what colour it is currently dyed with, default colouring with no dye is shown as a clear circle). If you haven't already done so, the quest to dye gear is unlocked at level 15 by a very quick and easy quest at Vesper Bay in Western Thanalan, specifically, this quest.
Until reaching 50 when I could unlock the glamour system, whenever my highest stat gear was particularly ugly, I'd keep two gear sets for that class. One would have my statistically best gear, and be worn in dungeons or any quest instance that proved particularly difficult. But for the other I could usually find an alternative that looked nicer while not being too far behind on stats, something good enough for most open world questing content anyway. That lets you at least spend most of your game time in nice looking gear. For now, that and dying gear a color you like are the best you can do.
I just spent a few minutes typing all this out about the dye system only to look up and see you had already given the info :PWelcome! Before that point, you can at least have some control of your gear's appearance by changing it's colour (not all gear allows this though - dyeable gear is shown on the character screen/inventory with it's icon having a small circle in the top right corner. So yea, get that dye quest ASAP. You might be stuck with some hideous gear, but at least it won't be hideous gear in 5 different bright pastel colors :P

Just a short description of how glamouring works, it does exact opposite of what you asked in the title, receiving the same result. For your new and stat-wise better year, you can attach a look of any other gear that can be worn on same level or lower. Not only does this mean your previous used gear. There is host of so called glamour gear, which doesn't have stats at all and are only good for using their look to glamour some other stuff. (Or I don't know, worn I cities, maybe)
If you say 'pls' because it's shorter than 'please', I say 'no' because it's shorter than 'yes'.
