It might not be a popular opinion, but I enjoy the dialogue system in recent BioWare games, with the wheel and the paraphrases and all that. I like getting some input into what happens in a conversation, yet also find it more interesting to play a character who has some personality of their own and isn't just my mouthpiece.
But while I like that system in SWTOR (to take the example above) I don't particularly think that FFXIV needs to make all its dialogue like that. I'm a fan of Final Fantasy, and the main story dialogue in FFXIV is pretty classic Final Fantasy - you're meant to sit back and enjoy it rather than treating it as a gameplay element. For me, that works just fine. I like the occasional "flavor" dialogue choices and would love to see more of them, but it doesn't have to be constant choices all the time.
