So i'm new to the whole pvp scene, and was wondering how I should go about gearing up for it. Is it worth getting the i180 gear first and then the i205 gear after, or should I just go for the i205 gear?

You don't really need those PvP gears beside for glamouring. Just wear stuffs with better secondary stats (critical, etc.) and a bit more vitality.

It depends on your job but you typically just want gear with ideal secondary stats. Accuracy and Parry are pretty much useless in PvP (there is a very low accuracy requirement but just 1 gear with acc on it should be enough to hit it) and as such should be avoided as much as possible.
The Morale stat on PvP gear is just a +ilvl boost when in PvP areas. So if a piece of gear has Morale+20, it adds +20 ilvl to the gear before it's synced to i150 (in other words, its useless in any current pvp). Some PvP gear has very good secondary stats though (for example +crit +det) and can be useful for that purpose.
If you are a healer, you may want to consider using a few vitality accessories to boost your max HP but barring that everything else is pretty straightforward.

Morale is a pointless stat atm. Focus on class specific stat, crit, and det.

Im working on collecting stuff for my slowly leveling machinist \o/ BRD/MCH is actually pretty painless to gear (Nin is even easier xD)
You wanna prioritize i190+ crit/det pieces
MH - Lore Weapon/ Heavensfire/i180 pvp gun
Head - i180 pvp helm/crafted 220 eikon helm/wiping city helm
Chest - i180 asuran upgraded law body
Gloves - i205 pvp gloves
Belt - void ark belt/weeping city belt/i195 dungeon belt
Pants - void ark pants/prototype midian pants
Shoes - i205 pvp boots/lore boots (sky pirate boots are fine too, -1 crit vs lore/pvp boots under i150 sync)
neck - prototype midian
earrings - lore earrings
bracelet - prototype gordian/i220 crafted
rings - lore/augmented lore (can do i185 dungeon ring too)
This is all crit/det and Ive seen a lot of people running like that, but personally I'd recommend swapping out one piece for anything i190+ having crit+acc. (200/210 eso gloves for example) Tho it's difficult to test, Im fairly certain you'll sometimes (~5%) miss from the front with zero acc from gear.
Up to you ofc, but I wouldn't bother with any vitality accessories at this point. In the past people would use them (especially in feast) to survive melee limit break, but that's been nerfed so it isnt really needed anymore (or worth it imo).

Pvp gear and Pvp materia is useless in pvp unfortunately i wish square would change this but i dont think they will
