I'd settle for just telling us how much progress / quality we will gain for a 100% efficiency action for any given recipe.

This would be great. It would be even better for a visual "shadow" when you mouse over skills to show where you'd land on success.
I'm guessing it was a matter of not being used to attempting anything of that level and maybe not having the cross skills chosen? It's easy to look at a recipe and figure the number isn't that high and then you do that first increase and watch the bar that you'd previously knock a decent chunk out of barely budge.

The difficulty number of the recipe shows up in the crafting log, so it's not exactly a secret on how much progress you need to finish a craft. Double checking things is important if you're doing a craft for the first time, especially if it's a craft with mats that have a significant cost. A dedicated training mode isn't really necessary, since there's already a crafting simulator where you can play around with rotations without requiring any use of mats.
It's also good to keep a mental note of checking the difficulty number when crafting something that can't be HQed. If it's way higher than normal, then you know to cross class Muscle Memory/Piece by Piece.
