How does skills and abilities work in this one? Lets say my real level for MNK is 30, and I go into the deep dungeons. Will I be able to use the levels 35-60 MNK skills once I hit that level in the deep dungeons?

No, you will only have your class skills. Job skills are unlocked by doing your job story quest. However, that also means that if you're gong in as a class you should be able to cross class skills which might make up for it.

I'm not so sure that will happen for 1-100, but I wouldn't be shocked if it did happen for 101-200 if what they've said about the difficulty scaling turns out to be true.
