I'm hitting level 60 on all crafters very soon yet, I still don't know which crafter I want to specialise in. All of them are useful and I enjoyed them all.

I knew I wanted LTW and GSM. My friend wanted WVR, ARM, and BSM. That left CUL, ALC, and CRP. I rolled a die, got CRP, and my alt got the other 2.

I picked WVR/LTW/GSM because weaver and leatherworker make all of the gear for, not only crafters, but also my main battle jobs - healers and casters.
I'm temporarily switched to ALC to make myself Luminous Fibers for the Ironworks set, but will be switching back to GSM in the future.
I went with WVR/GSM/CUL initially. I wanted WVR and GSM for sure. They make a lot of the stuff I want and need. CUL I took in hopes they would be adding good new recipes. Switched CUL for ALC because of fibers and I'm going to stick with that.
Bonus for all three of those being Ul'dahn specialties.
Initially
Wvr = Glamours + DoM / Crafter / Gatherer Gears
Ltw = Glamours + DoW / My Main Class / Crafter / Gatherer Gears
Between these two you already have Most of the gears in the game covered
Bsm = Tools and Weapons, more so tools than weapons.
Wanted everything though so leveled the crafts of 2 Alts I had into HW already and used my Main to gear them up to 3*. Didn't want to be in the position like some people where the new flavor of the Month showed itself and find myself switching over temp with new patches. Omni4Lyfe
Pretty much based on who, between my wife's and my mains, was better geared in which classes. I wound up with BSM, CRP, and LTW. She got WVR, GSM, and CUL.
Then we sort of haphazardly assigned one each of the remaining two to our respective first alts. She got lucky and wound up with the ALC specialization for her alt, along with BSM and CRP I think. I have ARM, WVR, and GSM on mine.
When our second set of alts get to 60, we'll each take the last two specialists we each don't already have on them. We've been enjoying leveling them.

just check the currently specialist recipe and choose the one you like most.
the basic is that as specialist you can craft the some locked specialist recipe.

I followed my desynth classe
Wvr and gsm
Only exception : I desynth ARM and spec BSM for tools
CUL, which will soon be joined by WVR and ALC.
Reason being that they are the only crafters I have leveled / am leveling at all, so no options for other specialists in the first place
Well, and WVR and ALC have the most locked recipes I actually care about as well (as a glamour and housing obsessed person).
I always go with Alchemist as a craft or profession in any MMO I play, so that one was easy. I ended up gearing both WVR and LTW in ARR because of my main jobs (SCH at first and later NIN), and I just stuck with those.
