Well, Nidhogg should've been the most dead mother@#$%er in existence.
Getting a spear to the brain, falling thousands of feet , crashing into the earth, then having your eyes ripped out tends to kill the hell out of things.
The fact that Estinien getting possessed somehow brought back a dragon's whole body, from the freaking thin air itself, is an absurdly lazy plot point.
But yes, let's just complain about the fact that random angry dragon was too angry to fight smart and not die. (even if you're just making a sports joke)

Because Nidhog was just a Shadow and not in his "real" Body.
To create a physical Body out of Willpower to fight us, it cost him a lot of Energy and that energy he will miss in the fight.
In add he had to overpower the "will" of his host, again he lose some energy.
About our past win against him:
He lost both of his eyes what should have been his death.
He just hadnt his original physical power - you can compare it with permanent healing against cell degeneration.
In add Hraesvelgr does not agree with what Nidhogg is doing and you can guess the borrowed Eye from Hraesvelgr resists the hatred from Nidhogg to some degree.

Because he couldn't just do the simple thing of step on us and it would be the end. I just realized that bad guys generally aren't smart when it comes to defeating the hero. Hell, he could have killed us while we were doing that badass walk while absorbing the powers from that eye ( or whatever we were doing).
nidhoog lose staps of fayth, need a birge or eye? no was hraesvelgr gift worrier of light. make attack, ded nidhoog...3.4 maybe more show? aftermath i bet
