I cant raid every week so Im woundering what would be a good class choice to jump in a raid once in a while ?
So far I anjoy my warrior but I guess that tanking is probably the last spot youd want to fill your raid with a non guildy.

If you're talking about the top-line savage difficulty raids(im guessing you are) then i cant help you, as i have no idea what the answer would be - and it might even change from static to static.
However if you happen to mean the normal difficulty 8 man or alliance 24 man raids(like the weeping city of mhach coming in the next patch), you should be able to get into a group for those with whatever class you want. So if that is the case, figure out what youre most comfortable with and you can que with that.
As long as you can make it most of the time you should be fine for a more laid back static group, but don't expect to clear savage content since they made that stuff hard as balls. Hell, the very first part on A5S is a dps check (also not easy to keep the MT alive).
I'd recommend against savage raiding unless you're willing to commit time and effort improving - it is not the type of content to just "drop in on" every once and awhile. Extreme primals also might be difficult. However, normal mode raids and hard mode primals are perfectly suited for casual play, and you don't need to find a static to do them.

All roles have the chance of being in need. You can keep an eye on PF to get an idea of if there are specific trends for your server. Tanks and physical ranged (brd/mch) seem to be the hardest to find on my server (as in, if your group's member is not available, it's hard to find a replacement of those)
Stick with Warrior, people always looking for a warrior. Idk about your server but Hyperion always has things like learning / progression groups to a5s, a6s, and there has been once where a PF was looking for a a7s rep member for the week. I should note that the PF's with statics looking to rep a member temporarily have some restrictions, a5 and 6s either experience to a certain point or kill and the a7s rep PF's was usually just a person with the clear.
Stay educated and prepared for the fight as well, don't skimp out on the melds, food, and pots to assist those you are helping, don't be stressed out about game money if you want to raid, just make sure you have enough to repair.
