In particular, 3.1 made levelling Desynthesis skills easier such that for 0-50% Success Rate, you get +1% per level, 50-70% is +2% per level, and 70-100% is +1.5% per level. Another very important thing to note is about the two items Bacon Broth (Level 50 Culinarian recipe) and Tinker's Calm (Level 50 Alchemist recipe) that temporarily increase your desynthesis success rate at +2.5% per Careful Desynthesis point. Other important notes are that an item being NQ or HQ does not matter, but any type of materia melded to the item increases success rate by 5% each, and an item being HQ increases melding success rate by, I think, 10%.
If you just want the most useful Desynthesis skills, then you have to go with at least Goldsmith. Your class levels have no effect whatsoever on Desynthesis skill levels, and all battle accessories are Goldsmith-based. Leatherworker would be the second-most useful one to me because plenty of gear is leather in addition to, I think, all Disciple of the Land accessories being leather. The third choice is up to you. Even though technically Weaver or Armorer would be "best" to cover more types of gear, it doesn't matter that much. I went with Blacksmith because I enjoy being able to do something with many of the Primal weapons. I would not recommend Alchemist or Carpenter, but they have their uses once in a while for some Primal weapons now and could possibly be useful in the future. Culinarian can yield rare swimsuits from fish at level 50.
Also I have to warn you, the devs have seemed to mostly forget about Desynthesis since the beginning of Heavensward. It's been almost useless at max level for the entire expansion except at the beginning when the various Nuggets, Ingots, and other crafting materials were much less commonplace due to people still levelling. I'm hoping everything will change in 3.3. We recently discovered Grade V materia can come from rare fish, so maybe it'll become easier to acquire through Desynthesis of battle items.
