Should I just throw Savage Might Materia V where i can and Piety Materia V on the rest? I plan to focus on healing, but i notice a lot of healers use accuracy materia.

It depends, some main healers will not meld Accuracy because during progression they won't get much of a chance to DPS, especially if they are allowing their SCH to stay in Cleric for the majority of the fight. In that scenario, a mixture of Spell Speed and Determination would be best, with Spell Speed taking priority.
Main stats such as Piety can only be melded on accessories, and generally it's better to meld Vitality if you plan to enter A8S, though with i240 gear being so accessible the lack of Vitality may not be as much of an issue.
It comes down to playstyle. Anything is viable, though if you're not comfortable with stance dancing it wouldn't make much sense to go with Accuracy.

I plan to focus only on healing



Then I would prioritise as follows:
Spell Speed > Determination > Vitality (on accessories IF you need to meet a certain cap) > Piety (accessories)
Some may prefer a different setup, but with Determination being nerfed for a while now I personally would not put it higher than Spell Speed.
