Your emotes and expressions will be different. I don't believe there are any major animation differences between the races/genders as far as say, an archer being female Roegadyn or female Highlander.
If you aren't sure, I'd recommend testing in the character creator/benchmark or making an alt if your subscription allows.
Emotes are different between races and genders, and in the Hyur's case clans too I think. Expression emotes I THINK are the same all around (aside from maybe minute differences when zoomed in to the face)
The exception to the emotes are the Persistent Dances(Step/Harvest/Ball/Manderville/Bomb/Thav/Gold/Sundrop Dances) and Visor. I THINK the change poses and sits are different from race to race and between genders.
All the emotes are different. Highlanders are a very expressive bunch. They put there whole body into everything they do. And they've got the second best /dance after Male Roes. Expressions are more based on what face you pick and I think the animations are the same across the races.

The only different parts are the:
- Basic Race emotes
- Racial outfit
- Running, sprinting and walking animations.
The only races that real different animation for some classes are male/female Lalafell and Roegadyn.
One that everyone overlooks: Stats. It's extremely minor, and not really worth mentioning aside from an interesting tidbit, but your race and clan affect your starting statistics. At level 60, this amounts to only a few points more or fewer of a particular stat, nothing to really impact your play style or class.
I just like to mention it because everyone else casually forgets about it.
As a machinist main I think sea wolf and highlander have about the same vitality and dexterity.One that everyone overlooks: Stats. I would try it out first. I was pretty dead set on the highlander for a while. I created an alt to try a bit and was glad I did. I much preferred the Roe's animations and emotes. Nothing specific but just a much stronger like for the Roe after moving past the character creator screen. I still love my highlander design but in practice she's better as my retainer. Hey I still get to dress her up too! (At least to some degree)
