Well... AFAIK, the ears are part of the hair (not literally, but with some hairstyles you get different ears, unless I remember wrong; it's been a while since I was a miqo'te), so if they did give miqo'te characters a bald hairstyle, they'd most likely take that in mind and make sure the ears were attached to the head ;p

As for 'covering up hyuran ears', the picture Mimilu posted kind of shows the miqo'te doesn't have any other ears than his (slightly mis-aligned) cat ears.

An incompletely rendered image isn't the same thing as a bald hairstyle. The bald "hair" style would certainly include correct attachment of the ears. They're just not in the position where a human's would be, so the sides of the head are smooth. That part (the sides of the head where a human's ears would be) doesn't really look all that odd, at least not enough to justify excluding it. It just makes the character a bit more exotic looking, like they're something more than just a human wearing a cat-ear headband.
