Wow, I wish I was that decisive. I can't make up my mind at all.Very picky, the face needs to match the type of character that I want to make.
An example: With male Lalafell, I want to have a cute face that scream youth and adventure. With female Miqote, I prefer to make a tomboyish female, give her face/tatoo/hairstyle that fits a lone hunter.
I've spent more money than I want to know about on Fantasia potions because if anything is slightly off, I need to correct it. I always spend hours in character creation too, even just comparing two slightly different colours. Don't worry, you're not the only one!

Well when creating a new character i have basic templates i use for each race because those are the options i enjoy.
If i feel something got messed up i will delete the new character and remake it to be sure.
When fantasia-ing my character, i'll first create a new character, check all the animations to make sure i like them, and then make a couple others if i'm still hung up between one or two options.
When actually using the fantasia on my character, i'll use the data from the character i decided to use and triple check every option to make sure i got it right, and only then will i confirm it.
Not very. I spent about 5 minutes on of each of my characters and I've never used a Fantasisa.
I tend to stick with defaults on the smaller details since I'm impatient to get to the game by the time I reach them in the creator.
I've Fantasia'd Isaac (the dork to the left of these words) more times than I care to count. I roleplay, so just about every detail has to line up with his story and backstory for it to work. Though come to think of it, he should have darker hair, and darker skin (he's from the desert).
I tend to be extremely picky with my characters' appearance, and it tends to change as I map out their backstories. My DRK, Midori, studied in Sharlayan (I like to believe Doma and Sharlayan formed an alliance at one point so they could be A Little Less Scared of Garlemald (TM)), so that's what her glamour and appearance is set to match. My SMN, Sh'mara, is actually from the same place as Isaac, though her story follows a much different path. I'll need to reevaluate her appearance at some point, though once she's capped, she'll probably wear typical Arcanist gear, and won't have much/anything to hint that she's a SMN (she might not even keep the Soulstone with her, ICly, in case of capture).
I also have a facsimile of Alexander Louis Armstrong that I need to level, who will never wear a shirt, and who I spent probably ten hours total tweaking in the character creation screen.

I'm also very picky. In the two years I've played this game, I have been female Midlander, Highlander, Elezen, both sun and moon Miqo, both Raen and Xaela and Lala.
For the first time in that two years, I decided to actually play a male character. I first did a sun cat, then decided that was a little too common, so switched to a male moon cat . . . and I have to say I love him.
I also will not stand for any clipping, so if I make a glamour and the hair clips, I always have to weigh which I like more - the glam or the hairstyle. Normally the hairstyle loses out and I end up at the aesthetician.
I'm picky with skin color too. I've done light skin and dark skin alike, however it has to be just the right shade. It cannot be too yellow or too red. I'm pretty confident that SE has made a fortune from me on Fantasias.

I think I spent around two days initially creating my character in 1.0.
My first character was very similar but I re-rolled to start with some friends and changed it slightly.
When 2.0 came around all I had to do was adjust the eyes to look like the original me, as they didn't carry over to the right colour.

People don't know how to take criticism anymore, and bad play is rewarded with with a coddling mentality. Yes, this is a casual game for the most part - that doesn't mean people need to walk on eggshells in fear of getting reported for pointing out things. This whole 'please don't say anything even slightly negative' mentality that we seem to be going towards and the devs seemingly pushing towards it is creating a disturbing trend.
