Can't say much for popular honestly. The best experiences I've had were on Mateus though so I think that might be a good one for you. Though if you go for an alt, make certain you can split your time and that you are willing to relevel stuff.

Balmung is currently the most popular one. So much so that making a character there is close to impossible. Unless you're willing to spend a few days trying to get in, you're better be off transferring an existing character over there.
I'd recommend your pre-existing character but maybe a brand new class on that character.
Leviathan is also a good choice, there be friendly people there
Perhaps if your sub allows multiple characters per different worlds you can create an alt to see if a certain server fits you.

So I know the basics of what the classes are just learning the new content. So advice on class, race , server would be most helpful. Your race is meaningless, but Lalafell are as good as food for the bigger races. <.<

Tanks and Healers are generally always in need for the duty finder.
For server, you could pick one of the more popular ones if they're open. Server transfers aren't restricted like new character creation is mind you, so if your heart is set on say, oh for example the terrific and amazing Hyperion server, you could transfer in your existing character rather than trying to make a new one.
But as super awesome as Hyperion is, it's not the only choice out there. If you have friends on Hyperion you could join Hyperion. If you happen to not know anyone you could, theoretically, join Hyperion. The options are endless!

Ill agree with Canadane. Your race only matters for appearances, so pick the one you like. Or buy a ton of fantasia potions and switch once a week. It all works. With that said, roe's are ugly and lalas are clowns. For server, the best advice is to join any friends already established if you can. If not, find a server that seems busy at the times you will usually play. More people means more chances for groups.
Class/job matters a bit. In the random groups(duty finder), tanks usually get groups almost immediately. Healers tend to wait a little bit, but not very long. DPS ques can go long. Depending on the time of day and the content qued for, these can often stretch over 30 mins. However, grouping with friends/FC members means you use the shortest que line that applies. For instance, your DPS grouped and qued with your friends tank means you use the tank line, so having/making friends can greatly help this too.
With all that said, i always tell people to play the class they enjoy the most. And since you can level them all on the same character, experimenting is encouraged!
