What you seem to misunderstand is that this isn't as simple as simply replacing a model of one kind of weapon with a model of another kind of weapon. There seems to be this fundamental misunderstanding that creating entire new animations just to equip them with a new weapon is either easy or worthwhile because of some misguided sense that adding variety is always a good thing.
All that would do is waste a whole lot of development resources that could be better spent actually making another job that might even use some of these weapon types you want so much.
DRK has used Scythes in 3 games. DRK has used Katanas in at least 5 games. You didn't see anyone acting as though Katana DRKs are just something we are entitled to have in FFXIV.
This may surprise people, but just because FFXI did something does not necessarily make that something a staple of that job throughout the series. I'm looking at you, Red Mages embuing their swords with magic.

If we're talking Fantasy here, which we shouldn't forget, then we could definitely say the same about scythes. Though scythes do have more historical advantage in that they were often used by peasants in many rebellions and uprisings. At the same time, there is such a thing as a "war scythe."

Another thing you're missing, is that nearly all scythes used in fantasy games is not the same as the agricultural scythes he's referring to. He specifically reiterates that he's speaking in regards to the "agricultural" scythe.
War Scythes are 100% real on the contrary as well. They're just not visually what people think of when they imagine them.
I'm definitely aware the issues surrounding implementation of this, but it's a request regardless. The animations for DRK would have to be tweaked, yes. Alternatively, I would support a DPS that used them as well.You don't swing a scythe in the same manner the way you'd swing a great sword. It'd look very awkward with the current DRK animations unless they came up with new ones (which is a lot more development time if we're talking animations).
Not to mention while scythes were historically used, they are far from practical compared to pitch forks due to the unwieldy nature of it, and war scythes are basically lances at that point.
As for how the "war scythes" look, yes, I know they don't look like what we envision when we think of scythes, but neither do agricultural scythes. The type of scythes I, and many members of the community, would be requesting look like this guy's:

War Scythes have the blade rotated 90 degrees, making them more closely resemble a glaive than something silly like a Grim Reaper.
