I sympathize. Like many aspects of the game, it would be nice if we had better options to please everyone more. We know, of course, that we ultimately can't please EVERYONE. But we could please more different types. The fact remains that many people very much enjoy the quests. They want more. They want even the side quests to be voiced. They do them regardless of reward. And others, like you, don't care. They do them because they're required to get to the content they really want. You have the option of skipping the cutscenes and clicking past the dialogue rapidly, but you can't entirely skip the quests.

Personally, I'd encourage you to actually stop and smell the linguistic roses of the quests. You might be surprised at how immersive and enjoyable they actually are. Practically, though, you can at least rest assured that the time involved to actually flip through the quests is actually tiny compared to the endless hours you can torture yourself on hardcore endgame content (for instance, there are people in the novice network that are in Heavensward but got there in less than the one week of playtime and still have beginner status).
