Except for culinarian, the rest are really dependent on each other. And even though culinarian doesn't rely on other classes products, it relies on their cross skills, so....
It really depends on a lot of factors. Are you in a position to benefit more from the products of one class (eg tanks benefit more from armorer, while casters benefit more from weaver and leatherworker)? That's a good class to pick to start with, if you don't find any other reason to go for a class. Check the marketboard. Do accessories sell for decent profits and in a reasonable amount of time? If yes, do goldsmith. Do metal weapons/tools do the same? Try blacksmith.
You don't technically NEED them at max level, but it does help greatly with obtaining mats for stuff, as well as the lvl 50 cross class skills and the lvl 54 culinarian/goldsmith skills (I prefer the culinarian one over the goldsmith one myself).
It is probably most dependent on the patch you are currently on, the time during the patch (early vs late) and your servers current sellers of X good for each class. Simply put the less competition for a high demand item the more money you will make. What this essentially means is you have to look at the current list of goods, see what has large profit margins (or SHOULD have large profit margins) and then look at your competitors, and find the market which has the best balance of the two.

I find CUL provides a good steady income, people always need food. The market does become slower the higher the gear level / later the patch, but there's always people that will purchase.
From what I've observed: Most of the other classes will see a massive payday when a new patch drops, but it'll drop pretty fast and be pretty dismal by the end of it. If you take advantage of those early patch days you'll end up with all the sweet dollah dollah bill, yo.
This question gets asked a lot, and there is no best answer, just like there is no best battle class. This game is mostly balanced in all aspects.
In my experience:
1. CUL is the most steady and consistent source of gil. The food don't sell for a whole lot but they're in high demand, especially in servers that are populated by crafters and raiders. Mats are easy if you can get them yourself. Half my income comes from selling crafter food.
2. ALC tend to get their money more on reagents and crafting mats, like Astral Oils etc. As such demand for ALC products tend to fluctuate.
3. Everything else are equipment or mats crafting. Mats crafting are also like in ALC, prices tend to fluctuate. Equipment crafting prices are patch dependent. Newest gear have highest demand and highest prices. Older crafts drop in demand and price. In my experience if you want to make money on the rest either stick to making mats or be willing to gamble making high level items.
I'm more of a fan of steady income at small pay offs than huge gil gambles for higher pay offs, so think I will look into cul. I basically maxed out cooking in XI first and it's a steady source of income even if it's low because as you say everyone always wants food.
If the crafter is one of those people that just focuses on the end game stuff with big payouts yes. You can get plenty of gil consistently by selling mats and lower level gear you craft.
I have started checking the MB for items people sell at ridiculously low prices because they are impatient...I buy them and then make a profit by selling them closer to the "pack" of items representing their true value. For example if you have this....
1k HQ
50k HQ
51k HQ
53k HQ
etc I buy the 1k item and re list it at 49k
