    1) No one single crafter is going to net you large profits since without cross skills, you won't be able to make the real expensive stuff.

    3) See above.

Consumables are always in demand so ALC and CUL are good choices. Depending on your server one may be more favorable than the other.

    2) I don't know any guide since I didn't follow any myself, sorry. Start with getting everything to 15 (you can buy the mats from npcs, just craft every single item in your log once). Do your GC turn-ins every day, turning in HQ items only. I also did a mix of Ixal quests and courier leves to get everything to 50. I had friends craft me leve items at first but as I got more classes up (and consequently had more crossclass skills available to me) I began crafting the items myself. 50 to 60 I did a mix of leves and collectables. Don't forget there are challenge logs as well for crafting. To minimize spending you can try to gather materials yourself but that also requires leveling up all your gatherer classes.

    3) It's technically possible to get a single crafting class to 60 without touching the other ones... by leveling solely from leves and GC turn-ins, buying the items required from other players.

You really can't get very far in the market with only a single crafting class leveled, sorry OP.
