Endgame wise, all classes make different gear and each class seems to have one specific gear choice. There are those that have more, like weaver does most of the body and legs while leather worker does most of the gloves and shoes, but SE seems to have made a point of making each class have at least one specific piece of gear they have to make themselvs. (For the break down: LTW gloves/boots/belt, WVR body/pants, GSM Earring/some helms, CRP Accessories, BSM most mh/oh, ARM 3 mh's, ALC the oil to make WVR/CRP main mats, CUL food -- within these are excep's of course like LTW makes its own body and ARMs body as well. ARM makes its own helm, etc.) But when leveling, you have a class quest every 5 levels that'll reward you with a piece of your choice, so gear really isn't an issue at that point. If you wanting a gearing issue, I'd suggest BSM since main and offhands give the most benefit, specially endgame wise. You can craft the end stuff more or less "okay" with an 170 HQ offhand.

It's best to try to level them all up at or about the same time. It makes mats easier to obtain. Your GC turn ins will always have stuff from other classes and that can be expensive. Make sure you have a ton of leves though. You get double exp for HQ turn ins with leves and GC.

LTW only does gathering left side. For crafting, it's carp that does it.
