I'm hoping the furthest they go with "additional mounts" is using models that are already roaming animals (e.g. goats, dodos, does/stags, ...raptors? :x)

I'd be seriously upset if i could ride ifrit, or if anyone could for that matter. FFXIV has some high expectations to live up to, and I think Se will not toss the lore and legend out the window on such a whim.

They could add a temporary malboro mount gag for next Halloween though, riding those through the city states would be a heck of a lot funnier than just gathering cookies. Sort of like the turning into beastmen event in FFXI.

I'm actually on the fence about this.

Yuna can mount them, so maybe allow Summoners and Beastmasters to mount their pets.
On one hand it would look awesome, on the other hand I would hate to see everyone doing it.
