I've always wondered why they never added half-breed or interracial races in game as this would obviously occur with so many different combination of love interests, but now that I read that the mother's race takes preference, it all makes sense now. Where can I read upon that?Though we're never told how many couples between those two were so the numbers might've been low and like how you get either a boy or a girl there's a 50% chance if could be a Human or not. Well seeing as FFXIV Lore mentions the child will always be the same as the mother.

As others have pointed out, she is this game's obligatory half-elf, much like Lilisette was in FFXI. Just because there are mixed-race couples doesn't mean they are able to produce viable offspring. Look at the real world and inter-species breeding; most half-breeds die before birth, and many are born with serious defects that kill them shortly. There's only a few that are able to produce viable offspring, but even then they're still often "broken" (mules, for example, are sterile and can't breed at all)
Just to add to my last post (don't feel like editing so late), perhaps we see a good amount of mixed-race couples because they cannot breed easily...
Just because a Roe and a Lala can produce children doesn't mean they can any time they want. Could be that half-breeds have an insanely high miscarriage rate, and that most half-breed children that are brought to term have severe defects that kill them early on. Basically, the chances of actually having a healthy mixed-race child are so low that some would choose a romantic partner of another race just for this (heck, this may be what is happening in Ishgard; highborn Elezen romance their Hyur servants all the time and no one really cares...its just when the odds are defied do the gossips really start talking)
Look at dogs IRL. There's certain breeds that can't be mixed (Chihuahua and Great Dane are often brought up here), and I know of other animals that you would think can breed, but do not produce viable offspring at all.
