ive obtained all these faded copies. how do i use them?

Craft with alchemist along with ink and blank roll depending the faded copy, then use the restored roll like a minion and you will be able to listen the music with an orchestrion
You have some recipe at lvl 50 and some other at lvl 60, and some in expert book at both these lvl

I think there is 1 or 2 at level 30 as well.

Also note that blank rolls are made by carpenter, while the actual songs are alchemist.

Can an alchemist do all the songs or some of them? I've got a ton of faded copies with a lvl 59 alchemist but can't do but a handful of songs.

As mentioned above, some recipes come exclusively from master crafting tomes, which you have to learn first. For others, you just need a higher alchemist level. Apart from that all songs from faded copies are craftable by alchemists.
