    Pink and green items

So which is better to keep or rather which of them is worth collecting knowing that the pink is actually a little better version of normal white items and green is much more better but at same time it seems pink can be useful for stuff like materia converting and so on.

Greens have fixed stats, while pinks don't. In terms of quality, they're the same, except the pinks from diadem.

Of course, it's better than using whites. They are as strong as the green ones, and secondary stats don't really matter before lv 50.

Green items are unique, cannot be destroyed for materia, belong to a specific set and have stats which are fixed. These are dropped from dungeons and are sometimes a popular choice for glamours later on. Pink items are a high qaulity version of plain white gear, they are infact equal to HQ versions of plain items. Like green gear, these can be found in dungeons but unlike greens, they can also be earned through leve quests. The stats on pink items are never fixed, so even if you have one pink piece and you find another, the stats may vary. Also, unlike green gear, these can be destroyed for sellable materia. PS In later dungeons like DD, green items you find can be destyroyed for materia.

Don't lie because you are unaware of how the system works.

Basically, the items you are speaking about are Aetherial and Uncommon items. Aetherial items, as others have mentioned possess randomized secondary stats, which makes them on occasion better than anything else at that item's level. Uncommon items meanwhile have set secondary stats like Common items and later Rare and Relic items.

Now, you have probably noticed this symbol on some pieces of equipment you have either bought or seen, or even materials you have found in the world:

That lovely little icon represents an item that is High Quality or "HQ" for short. HQ materials are worth more and allow crafters to more easily create HQ equipment and consumables. While HQ equipment has their primary stats (Strength, Dexterity, Vitality, Intelligence, and Mind) maxed out for their level as well as often having one of their secondary stats maxed out for their level. In addition, all items that are Aetherial, are found in dungeons and are not of Common rarity, or that are purchased from select NPCs have their primary stats maxed out as well.

Essentially, if you haven't guessed by now, this means Final Fantasy XIV breaks the mold of MMORPGs in a way, here, rarity and an item's worth aren't equivalent, what really matters is the item's level combined with its quality. So, use what is the strongest for you, and don't be afraid to ditch even Rare or Relic equipment for something better.

You said pinks are as good as greens, stat-wise. Which they are not.

Pink items can be as good, if not better than green ones. Defense may be different based on class restrictions.

The reason they are pink is to notify the player that the secondary stats are random, but during leveling secondary stats are not very important. (However at max level people do optimize all stats and that's why some chose to wear 210 pink gear over 210 blue gear when 210 was the item level cap). Pink gear can't be sold or traded to other players whereas some green gear can. You can hold multiples of the same pink item because they are not unique like most green dungeon gear is. Pink gear can also be converted to materia, but green gear usually can't unless it's tradeable. Notice the "Convertible", "Untradable", "Market Prohibited" and "Unique" tags on the tooltip. They tell you about the qualities of the piece.

I advice you to wear pink gear first until the spiritbond bar is full, then convert the piece and put on a green piece of the same level. If you don't have two pieces at the same item level, just wear the highest item level piece regardless of colour. The level 44 dungeon is the first to drop tradeable+convertible green gear so at that point you can choose to convert it or sell it on the Market Board.
