Uh, nope - cherry picking nothing. I cleared MSQ for Western, I picked up the open world aether currents. I went back settlement to settlement to bulk run all sidequests on alt jobs for exp. Flying quest for the cat in the first settlement popped for me before I started running side quests in other settlements, and didn't have all the quest based aether currents because of that.

As much as I question OP's desire to not want to fly, there's no practical reason not to include simple QoL improvements in game such as flagging when a quest requires a specific mode of transport.

It shouldn't be hard to implement, but eventually you're going to come into content that is going to require you to do flying is all people are getting at. I'm sure in the end you will, and their point is whether you leave the quests that require flying to the side for later or not, eventually you'll get into end game content that requires you to fly. The result will be the same, you will need to spend time to get them otherwise you will be locked behind flying. It is inevitable basically.

You are asking for something that would make it a shortcut for you. The entire point of the flying system as it is at the moment is obtaining the required currents as you go through the zone. So if a person would actually be doing the stories, quests, fates etc, they would eventually end up getting all of the currents before being done with the zone. And then come the flying quests, and then you can do them. So I understand both what you mean and the way it works at the moment... But since it would only be a small marker I won't argue against it. But OP, you will end up flying. Trust me.

Actually it is, my FC leader assisted a member with Sea of clouds by taking them to the locations needed.

Didn't you post a thread asking if Summoners were sucking the life out of Eorzea? I think that's a perfectly fine question to ask, but the answer to the question was explained in the very first Summoner quest. To me if you need to ask if Summoners are killing the planet, then you must be someone who doesn't pay much attention to quests or simply forgets all information reveled in quests shortly after. There is nothing wrong with not paying attention to the lore of the game or just forgetting the lore, but it seems a bit strange someone who might do that is complaining about having their immersion broken... And I still don't understand it why people complain moving across a Z axis or moving at a faster rate than ground mounts is immersion breaking, especially since the new 3.X maps were designed to accommodate faster travel and Z axis travel. I would love to know why you say flying is immersion breaking.
