Grand Companies

It looks like I may not have done enough homework before choosing a Grand Company. Is it the case that Immortal Flames provides the biggest benefit to DoM classes? I chose Twin Adders because it was my home town.

Also, if the benefit is real, how do I go about changing? I ran around the Immortal Flame HQ and didn't see an obvious way.

From what I can tell there is no significant benefit of one GC over another. Choose whichever you like best.

Never heard of a GC benefitting X thing more than others, where did you hear that?

Your GC of choice only primarily affects you in PVP
otherwise the only notable difference is the GC gear design and colours

They tend to have leveling gear that might be slightly and I mean slightly better than the other for classes that start in their cities but that's about it. But it's just filler/glamour gear in the end and make no sense for the rest.

and GC isnt that important, sure for leveling sometime a GC piece can be better than a dungeon drop but nothing matter during leveling, and GC gear isnt used at level 50/60 so yeah

Grand Companies only had really specific benefits between each one in terms of gear back in the original version of FFXIV (version 1.0), however that has long since changed with ARR (hence that article presumably used this now outdated information and treated it as if it was still current) - now GC gear pretty much only differs appearance wise (stats are pretty much the same across all three GCs). So go with whichever you like the look of/lore wise the most!

As for being able to change, you can change your Grand Company once you have reached the current maximum rank with your current one (Second Lieutenant), and then speak to a npc at that GC HQ to change. It costs a fair amount of company seals though, and it should go without saying when you change over to the new company you will start at the bottom again. Thankfully though your previous ranks remain in your old GC so if you switch back it will be as if you never left rank-wise.

It's true that the immortal flames has better gear for casters, however, by the time you have a high enough rank with them to use the gears you usually outlevel the gears that's available so it's trivialized. So as others have said, I wouldn't worry about it in the least, the main advantage to the gc gear comes from having full sets, anyway.

Another thing that can factor in is that you do all sorts of GC turn ins in the main city of them and debending of playstyle you might visit them often or very scarcely and it easily becomes a hometown of sort. At least for me this factored in a bit since I like the gridania atmosphere rather a lot compared to its siblings.
