Any buff that has "levels". Each level is a stack. Example: Aetherflow can have up to 3 levels or stacks. Some actions will use an Aetherflow stack or level. When the stack reaches zero, you lose Aetherflow and any spells or bonuses that require it. MNK has Greased Lightning stacks that improve their attack speed and dmg I think. WARs have Defiance stacks that has 5 levels. Each stack increases Crit rate and at 5 stacks, WARs can unleash a special ability that spends all 5 stacks.
Stacks also refer to buffs/debuffs. Example, a WHM and SCH both have access to Aero. Aero stacks which means when both WHM and SCH cast it, the mob has 2 instances of Aero because it stacks.
The main use was answered. You may also see it used for inventory for items that "stack" together. For example, each Gysahl Green doesn't take up a separate inventory slot. Any Gysahl Greens you have in inventory will try to condense into a single inventory slot, which is then referred to as a "stack of Gysahl Greens". Inventory slots can only hold up to 99 copies of a stackable item so you may sometimes see a "full stack" used to refer to 99 copies of that item.
The above 2 posts, and in some cases it can apply to buffs or enhancements. For Example:-
Raging strikes increases your damage by 20%
Blood for blood increases damage dealt by 10%
you can "stack" these buffs for a 30% damage increase.
However some things don't stack, like scholars galvanize and astrologians nocturnal sect both mitigate a portion of damage but will not stack.
