Followup question: Why should I bother? It's way too much of a grind considering it's all going to go obsolete the next time the level cap increases.

Consider it took a year and half for the first level cap increase. While it might not be exactly that long for the next, it's certainly not around the corner.
I personally stopped gathering scrips after I got btn and min main hands. No desire whatsoever to grind 44k+ blue scrips. And that was like 6 months ago lol (I'd prolly be done by now if had taken it seriously, but oh well)

I can only speak for the miner Folklore items: They sell for 20-30K in HQ a pop. But they sell EXTREMELY slowly on my server (your mileage may vary ofc, servers are different). I'm lucky if I manage to sell 1-2 a day.
If you ask me: unless you need them for your own crafting, they aren't worth the effort of collecting 15K blue scripts.
This is also why I haven't bothered with getting the books for my botanist.

It's worthwhile IF you have a use for the stuff you can gather off of the Folklore nodes (or the folklore fishing).
If you do not need those things - say, to sell or to use in crafting your own 2 star crafting/gathering accessories - then getting the books is not going to help you at all and you can skip that grind.
That said, it is not that hard if you check to see what Rowena wants, and be sure to hit the 10, 12, and 2 o'clock nodes every 12 game hours. Fishing, I found to be a tad too much RNG, so I used Miner and Botany, whichever gave me the better BGS collectible for that particular node window.
I like to fish then when the other nodes are up in the Hinterlands, grab them (since Morel and Cuprite are essentially back-to-back).
Honestly you don't NEED all of them, unless, of course you have lazy friends and have unofficially been designated to gather everything forever. Then maybe you need all of them.
Either way just get the books you know you'll use first. For example I got all the mining books because I mostly mine. Next I'll be getting botanist books because even though BTN makes me barf, everyone I know keeps asking me to get them some Seventh Heaven. So, guess I'm doing that now.

Clearly, the best Final Fantasy character is Locke Cole.
Glamour is TRUE ENDGAME
If you have the inventory/retainer space, you can also stash the cuprite and morel, then turn them in on the days that they have a bonus.
I'm willing to bet all the legendary node materials will be key items in new crafts that 3.2 brings.
See all those aurum Regis ore going for a pitiful 300 a pop?? When 3.2 hits that will skyrocket to 5k+ a piece. Just you wait.

If they add it to cheap recipes: yes. If it remains like it is now where they are only needed for the extremely expensive stuff in small quantities, people will stick to HQ and leave NQ to rot.
What I did myself is sit in hinterlands an collect 6 items per 30min (morel an cuprite )
my inventory an retainers use to get full but I only turn in the one w bonus, sometimes was morel, sometime was cuprite, thats 72 a pop.
I quee from there whatever rulette or dungeon since usually the runs takes 30min by the time I was out I could usually grab one of the nodes, from there was all dedication.
so far I got them all, my advice is to get miner an botanist books first, at least on my server the fish from folklore sell super cheap.
good luck.
I go the Morel and Cuprite route because I don't understand the point of fishing in this game. But I'm doing it slowly. I'll afk at either or site if there's a bonus in the scrips. 360 or 396 every half hr isn't too terrible. It's not OMG great but it's something. I'm one book away from having all my folklore. Thank gawd.
