    The majority of WoW users do not have that much clutter on the screen.

    My WoW interface actually has fewer elements than the default WoW UI, except in raid mode when I have a full 10/25 unit frames that takes up the same amount of space that my party frames do. I am also, a main healer and get plenty of information from the addons that I have.

    Furthermore, Yoshi has clearly made it his priority to appease both keyboard/mouse users and gamepad users.

    Secondly, for those of you who say the current UI is better. I am floored by that response. You may like the blue color and how it looks; sure I can agree with you on that. It does look fine aesthetically, though I do prefer the newer screenshot about 600x more. However on a functional level, the current UI tells you very very very very very little as far as battle is concerned.

    The UI presented is just a justification that Yoshi wants to bring the game up to modern functional standards. Not the current archaic menu UI.

    I see no reason to have that many people in a party
    I count 8. The current party limit. So you must hate the current party setup then.

    Completely agree. I've seen some incredibly minimal WoW UI's with more information than the current XIV UI can deliver. Addons open up a lot of opportunities, ones that the dev teams sometimes can't or don't want to spend time on.

    For instance, someone might have already created a "receive sound on /tell" UI addon. I am aware SE added it, but those small features sometimes add a lot to the game that don't necessarily need to be created by SE.

    Also, SE has stated they are considering actually making several different UI skins/appearances to appease peoples tastes towards the classical blue, or something more modern, though they may not get around to it. That is where addon development really shines.
