I enjoyed the fishing system in FF 11 - When you actually had to fight the fish to reel it in
I liked the fishing system my dad, brother, and I had. Where we sat in a boat with snacks and drinks, shot the breeze and never caught anything.
Insanity is a gradual process, don't rush it - Ford Prefect
I actually really enjoy the fishing in this game, in part because I'm not having to focus constantly to catch every little fish. It's a good way to relax after I've been doing runs trying as hard as I can to output my max DPS, or healing tanks who don't know what cooldowns are. It's not as dull as crafting though in that I have to actually pay attention a little to know when to reel the fish in. I enjoy it quite a bit as is.....
I actually prefer the simple system this game has. I don't really want to fight to catch fish.
I'm quite fond of the existing fishing system, actually... More so now that it actually uses GP though, switching your brain off and letting RNG take over was fine, but I really enjoy having another level to actually think about; focusing on the pull on the rod for which hookset to use is great, as is perhaps focusing on the speed of the bite (Thunderbolt Eels, for example, share a hookset with Pipira Pira, but Pipira bite faster than Eels, so I can avoid wasting GP on Pipira by paying attention to that). Glad they finally gave a use for GP, still waiting on Fishing Competitions, though... How hard can it be to give Fishers an instance for various fishing types (Deep Sea, Dunes, Sky, etc.) where the quantity, size, and rarity of caught fish contributes towards a final score? I'd much rather that than the way Gathering was tagged onto Diadem...

If I remember something Yoshi-P said back in the beginning, may even be along the lines of BETA beginning, the fishing in FFXIV actually worked alot like what the OP's video shows fishing to be.
Personally, I like the fishing style in FFXIV and agree that it makes for great brainless downtime which in turn adds a really relaxing element to the game. I think fishing is the one real class that is the most thoughtless class to cap lvl on.
With that said, I saw someone said they would like to see fishing competitions, which I would agree with and happily partake in. RW fishing, I don't have patience to do. This game is the only way I will fish.
Also, my apologies for my redneck ways, but we also need to get a Taxidermist type of NPC where we can get our biggest catches mounted for a Fishing Trophy wall that can be shared.
For a bit of sidestreet, maybe the Dev Team will add a Hunter Class to the DoL that works like the Fisher so we can also mount big game hunts too. We have Machinist, Lancer, and Archer which are natural hunt classes. Why not?
Show the hate or Love!
Well, we definitely need more, but we already have the option of turning a Mazlaya Marlin, Takitaro, and Megalodon into wall-mounted furniture pieces. Granted, you don't actually need to catch them yourself since they're crafted, which sucks, but there it is. I'd absolutely love to catch various small fish for a Fish Tank furniture piece, but given it's taken them till 3.2 to add a Jukebox... Obvious achievement reward for any Fishing Competition based content would be actual trophies, kind of hope the upcoming PvP changes offer something like that, because we have a Display Stand and nothing to display on it currently... I suppose fixing Housing demand comes first though...
Would be quite nice to be able to view other peoples Fishing Records, come to think of it... That should be no different than viewing what Jobs they've leveled IMO...
