Yea, that's a bit of a toughie question. Me personally, I've put all my attribute points into STR. It helps me keep enmity better as well as helps clear out enemies quicker. But it can be a double edged sword if you don't understand how your role functions (or if you have a subpar healer with you). It's probably best you go with VIT at first. As ruskie said, you can respec for 250 GC seals if you want to try something out later. And with the roulette's, you should have no problem with seals. And if you craft or gather, seals come in real quick from the daily provisioning turn in's.
As for DRK, just be a bit careful. It's a much tougher learning curve than the other 2. Part of this is because you come with a full arsenal of move sets right away. Unlike the other classes, the HW classes start you at 30 and give you all the move sets up to that level. So instead of intimately learning each move as you get it leveling, you all of a sudden have 10+ moves that you need to know well in order to do your job as a tank.
As you play as a tank, you will learn fairly quickly how important keeping aggro is. Each class role (DPS, Healer, Tank) have very different dynamics to them. You could run some dungeons or bosses a million times on one class, then realize you have zero clue how to run it as another. I myself have barely touched DRK, but from what I've heard, it's probably the most complex of the tanking classes to learn (but I have heard it's very fun). Provoke would be nice, but I think you'll be ok as long as you use unleash plenty.
