Aren't we already to the point where people are saying we have too many skills?
Plus, there would be a huge issue with balance.
For example, your Sage idea:
You would have a White Mage with Astral Ice, that would be an insane amount of MP recovery for a Healer, way better then Scholar's.
And then you could just slip on Cleric Stance, which increase the damage of your spells by 10%, and poof, instead DPS. Now add Enochian, Ley Lines, and Presence of Mind.

As a BLM I have 4-5 empty slots I am not using on a controller setup. I can literally have a setup that is perfectly in sync with PvE and PvP content.

I could even remove Freeze and Sleep since in HW content they are 98% worthless.

Well, my AST has about 3 sets full with a controller setup. I could remove Stella for one more additional space, I guess, but one space doesn't do much...
Then there's my SCH, who has about 3.5 sets full, what with having to micro-manage the fairies and all.

Healers are quite different IMO. I don't play Scholar much but I have 2 sets for that and might need to might 2 more for each pet. I think the healers need the most room out of any role.
