So I know both require ACN 30 but is it possible to play as both? I know they use different stats so you really gotta pick one or the other but can both be viable end game if you stat for one and not the other?

It doesn't really matter.
The only case it might is if you want to play competitively to get world firsts. In that case, you're going to be specializing in one or the other. To be fair, this will be the case even if the stats were separate because static groups tend to have members stick to a single class they specialize in for world firsts (because you really need to know your class and weekly caps on drops and tomes means you can only gear one job up at a time).
In any other content, even savage clears, a difference of 10 or 15 points is not going to be big. It's the difference between 1 or 2 ilevels at most (or the difference between a Seeker of the Sun and Keeper of the Moon miqo'te race choice), but the prioritization of crit for SCH and SMN means that a high crit rate can compensate for a low primary stat.
Go either way. I have +35 INT and can still heal through A4 on my Scholar because of gear (it's not even the best gear). You can go for a more even 20/15 split if you prefer. It really doesn't matter unless you're in a static. and in that case, if the static group needs a healer, you will be asked to main the SCH; or if a dps, you will be asked to main as a SMN.
You can even buy a Keeper's Hymn from your grand company for 250 seals (under other items for sale at the GC quartermaster). You can easily get that many seals by doing 2 lv.50+ FATEs, a leveling DF, or a single craft/gather turn-in. You can even turn in a single junk dungeon drop for 1000 seals. It is super affordable to change your stats three- or four-times a day.

Perfect! That helps me out a lot. Thank you!
