Please help me understand what to do at max level

I miss FFXIV and I would like to get back into it, but doing nothing but grinding dungeons/alex gets very old, very fast.

Outside of the gear grind and leveling other jobs, are there interesting things to do at 60?

I feel like I'm missing a lot of content, I know there are things like The Golden Saucer (Chocobo Races/that card game), some sort of treasure map system and probably other things that I just don't know about. Having a "To-Do List" for MMOs really helps me have more fun, because I feel like I'm accomplishing more. I tried looking something up for this online, but the ones I found were only related to gear grinding.

Basically, I'm just asking for advice on what to do, if you could please explain/provide a list of interesting things to busy myself with, I would be really grateful.

Sorry, I know it's a lot to ask, but I'm just really hoping there's more to enjoy outside of just waiting for the patch to be released.

Personally going for hunt glamours & chocobo leveling here!

Knocking off accomplishments for 'titles' is my past time to keep busy if you like task orientated gaming which has a large variation

Well you could try crafting or gathering.

Personally endgame for me is GLAMOUR so everything I do is really for better looking clothing (lol but true).
Some other things? Do the sightseeing logs; they don't give much as a reward but you find the coolest places thanks to it.
Also try your hand at a Zeta weapon if you don't have one yet.
I know I spent too long in PVP just for glamour, but if you actually like it then Seal Rock is pretty fun.
Start collecting different minions for Lord of Verminion...gotta beef up your arsenal.
I spent a long time leveling and gearing/glamouring my retainers. Glamour?? Useless, except no it isn't. Makes me feel better.

EDIT: a long term goal of mine was to get the "The Reaper" title...comes from FIVE HUNDRED gathering leves. Sounds easy right? NO.
But now I'm one of I think about three Reapers on my server so it was time well spent/wasted.

I second trying out a craft. You just might like it. I just hit 50 and I feel even at 50 the game opened up to me a bit more.

I find I've been taking the game at a snails pace, not because im inactive but because a lot of my time is just spent chilling and doing random useless stuff with FC members, Ive barely touched crafting but people seem to get really into it.
There is also world completion, I.e. pet collecting, finishing all quests, getting top rank for beast men.

Ive also been looking into the "All final fantasy worlds are in the same universe" theory, looking for references and small areas and strange things that may back up the theory. but im just a theorist... A GAME THEORIST!!!!

Here's my to-do-list. I hope this helps you find things to do. ^^ I had to make one because there are so many things to work towards and my memory sucks lol. It's missing pvp related things which is one more thing to dabble in. If you're only interested in max level things, then crafting, pve (gear up and do savage) and pvp (rank up, get mounts and glamour) are the main attractions. Cosmetic things, achievements, housing, gold saucer and moneymaking are all available below level 60.

Hourly:
- ventures
- chocobo training at the stables

Daily:
- beast tribe quests
- daily hunt marks
- mini cactpot
- GC turn-ins
- roulettes

Weekly:
- raids
- jumbo cactpot
- B rank hunts
- challenge log
- cap tomes

Long term goals:
- finish all quests in the game, including moogle mail and hildebrand
- level classes
- sightseeing log
- level chocobo
- get a zeta weapon and/or all first stage ARR relics
- get max rank in all grand companies
- get all fate and dungeon minions
- get tanking achievement mounts, MGP mounts and pony mounts
- get titles from achievements
- level desynth skills
- level retainers
- design a glamour for every job
- save money for housing
- get all triple triad cards

Do whenever:
- use up leve allowances
- do maps
- spiritbond gear
- farm herbs/ore/monster drops/gc seals for materials
- craft and sell stuff
- trials
Coming in less that two weeks:
- airship exploration
- minion battles
