Has anyone ever double click on a node but then someone walks in front of the node so you click them instead which cancels your gathering somehow...
I wish they would just change this priority clicking thing, happened to me several times already.

This hasn't happened to me yet, but indeed when there are like 10 people all ganging up on a node, it's almost impossible to access it on the first few clicks. :/

As a PC player, I like to use the X button to hide the players' nameplates. On a default configuration, the function that X is bound to is called Target Filters.
I couldn't tell you how this works on PS3/PS4, but that is where I would look first.
With a game pad just pressing X will click the node no matter how many people are around it. Same goes for npcs and summoning bells. One of the few situations where gamepad is better.
for pc i believe by default hitting zero on the number pad does the same thing. Or rebind "Confirm" under keybindings on the System tab to something easy like a mouse button. Works wonders in so many situations
On my PC I changed the keyboard to target things like a controllers X button to my F key so I just walk up and hit F. I also bound the G key to whatever the O button is. So F targets something and G untargets stuff.
I did exact same as Pyretta did, I keybound F as "confirm" since keybinds were possible. (Comes from GuildWars2 that I happened to play back during 14 Beta, so I was used to it already.) And then there's the X-button on keyboard that removes all other players as targets and you can click the npc/object target (even through them if not otherwise visible) on the spot where cursor changes into a hand. Never have had any trouble targeting things with those two methods.
So I suggest those two methods to avoid clicking random targets with mouse and lose your nodes.
I hit 0 on NumPad to select node when I'm close.
