I've been focused on getting my crafting classes to level 50, which I finally did. Woohoo! And now I see I can make collectables? What are these for? Should I be doing them? Are they just like another GC daily turn in?

They're similar to GC turn-ins, but you can turn in as many as you want per day. Once you get to 56, you'll also be rewarded with Blue Scrips, which you can use to purchase Master craft books, as well as a level 58 set of gear. At level 60, there are also collectables for Red Scrips that you can use to get your class-specific gear and/or materials to make them (there are two versions, one i180 and one that is i170 and crafted, but with materia slots).

Now you have all those lvl 50 cross class skills to construct some awesome rotations!
I don't recommend making collectables too early though. It doesn't hurt to try a few early to get a sense of what it's like. But you only get EXP from making collectables when you're below level 56. Comparing with collectables, GC turn-ins and leves gives much better EXP. It is, however, an alternative if you run out of leves.
