Are there certain items that are more likely to produce certain Materia than others. I'm trying to farm Savage Aim/Might for Relic Weapon Animus specifically.

It's all totally random but I seemed to get more from items with STR or DEX or Crit or Det on them.
Hey OP, it's not totally random, what Ruri said next is more accurate. Gear that has crit/det on them have a chance to drop savage aim/might materia along with whatever the other stats are. Example an armor with str/vit/crit can drop str/vit/crit and elemental materia. All DoW/DoM can drop elemental materia. Craft/gather gear drops their respective materia no elemental. Hope that helps!

Okay there are a few things wrong here. First if you have dexterity gear you will not get Str or parry materia. Second to make things more clear accessories can equip to any class and if you are wanting specific materia use gear with relative stats. Healing gear - spell speed, piety, mind etc. caster - crit, det, spells-, int. Tank - skills-, str, parry, crit, det, vit. Str dps- str, crit, det, skills-. Dex dps same but dex instead of str materia.actually it doesn't matter if the DoW item has crit/skillspeed/accuracy/det, it will still drop those materia; DoM also can drop crit/spellspeed/accuracy/det regardless of if it has those stats or not. This is not an exhaustive list but a good base (obviously acc and element materia is in the mix)

I have gotten Battledance materias from non-tank gear, and plenty of crit/det materia from healer gear.
VIT materia can come from any kind of gear, it's NOT restricted to tank gear only.
Tank gear can give you STR and DEX, too.
My first comment was in response to "the stats on an item are irrelevant to the materia." The stats are relevant because this helps determine what possible materia can convert per item. This is related to each class but was further defined in my previous post. Again if the stats were irrelevant than a PLD wearing all crafting gear would than only be able to convert that gear into str, parry, vit, det, and crit materia. Which is not the case.
So my statement is saying the materia dropped is based on the stats, and that my list was not exhaustive. First battle dance is a weird one I general, second if the healer gear has crit or det than it can drop crit or det and same point with vit gear for the left side has vit therefore that materia will drop too. Finally for tanks DEX affects parry therefore yes it will drop for tank gear, it will not drop off mnk or drg gear. My apologies for not being clearer.
Stats do affect the Materia you can get converting an item. BUT - they do not provide any sort of limiter per se.
Aetheryte Ring. This has 2 stats : CP, and Increased Spiritbond Gain.
The CP should make it a Crafting piece of gear (which is what it was equipped for), capable of converting only into Craftsmanship, Control, or CP Materia.
The Increased Spiritbond Gain trumps that, however, turning it into a piece of Combat gear, capable of turning into combat Materia instead (Str/Vit, Int, Mnd, etc., Accuracy, Spell Speed, Skill Speed, Det, etc., and all resists). This ring cannot, as far as I'm aware, turn into Crafting or Gathering Materia.
Beyond that, any combat class gear can turn into any primary stat. Any combat class gear can turn into any resistance. The primary distinction among combat class gear turning into Materia is that DoW gear cannot (or has a dramatically reduced chance to) turn into Spellspeed Materia, and DoM gear cannot (or has a dramatically reduced chance to) turn into Skillspeed Materia.
