My friends and I figured out how to see who unsubbed. I'll be more then happy to share it with ya

If you view someones character info, it will show them as having no jobs. As in it'll have the list like a - - - throughout their whole job list. As it stands right now only 4/66 of my FC are subbed. Can check your FC and FL now to see Of course it doesn't let you know the entire amount of who has unsubbed throughout the entire game, but its a start.
