Actually the reason you wear pentameld is for decent dps WHILE maintaing a ton of health.
Full STR acc is definitely more dps (it simply has more str).
But it has less full main stats (STR+VIT), so pentamelds are a better 'deal' than mixing and matching str+vit accessories.

Yep, the "optimal" setup for a tank is 35 str in bonus stats and five Slaying accessories. This is the "glass cannon" build. You're using purely the Vit you gain from your six left side items.
The problem is that this just isnt enough vitality for a lot of the harder content until you start to overgear it. As soon as you reach the point where you need to drop just one Slaying item for a Fending, you're into the realms where Pentamelded gear is going to be better. A pentameld accessory has 31 Str and 29 Vit - 60 bonus stats. An i210 fending/slaying has 49 bonus stats in either vit or str. ANY situation where you're mix/matching str and vit will always come out better running pentamelds.
Of course, there's also the fact that once you start to overgear a fight a bit, doing maximum dps in full slaying isnt -necessarily- the best option. If you can maintain great DPS but have more health than you need to make it less likely a healer being sleepy might cause a wipe, why not? Running a Pentameld set is less dps than full slaying, but still has a lot of strength and offers a really nice cushion of health. My personal view is that once you reach the point where you overgear an encounter anyway, you may as well stick to pentamelds to make the encounter "easier" unless you're specifically going for speed kills. 145 vitality and 155 strength is a really really nice combo.
I'd personally recommend 3 pentamelds and 2 slaying for Savage. @190+ it should put you at 20k, maybe a little more or less, which is all you'll need up to A4S (at which point you'll probably have enough gear to run 3 pentas and 2 slaying as well).

So using melds gives you the same amount of hp as having 2 or 3 fending acc but with more str than you would have otherwise?


never bothered picking up the Prototype fending accessories, but using the 180 stuff, full Pentameld is the equivalent of wearing 4 180 fending pieces. I'm sitting at 896 STR and 886 VIT with my pentamelds, 16,944 hp in Deliverance w/o party or food, 21,180 in Defiance.
To be honest even if they put i180 acc they are going to be very expansive i am not sure i would bother.
Especially since materia mêlding to Fully cap str or vit might be really tough with the rank IV and mêlding rank V Is really not an option atm.

The problem right now is that unless you're specifically outgearing the vitality requirements for an encounter such that you can wear -FULL- Slaying (not a single Fending part) then i150 pentamelds are objectively better than the current highest item level blue quality i210 accessories, by quite a way. TBH i150 pentamelds are probably going to be on par or better than even i220s, and only beaten by i230s given the rate of stat expansion. Even then it'll probably only be due to higher -secondary- stats that i230s win out.
Currently i150 pentamelded accessories are future proofing your tank gear for the NEXT tier. If they release the new crafted accessories with whichever content drops i230+ then rich tanks can ignore all right side drops/tokens. I worry how much the next set of pentamelds will cost but given how long the i150s have lasted, the next set will probably last until the NEXT expansion >_>

Pentameld is when you meld 5 materia onto an item. It's generally expensive because once you start to overmeld an item the percentage of success gets lower and lower. So in the case of accessories you meld str onto a vit accessory up to its cap then meld secondary stats onto it.
