WoW got rid of a *lot* with WoD, and ESO you're limited to 5 + an ultimate at any given time.
You can have two weapon sets(identical types, like two Sword/Shield or two Destruction staff, or two different weapons) for a total of 10+ 2 ultimates.
I take its been awhile since you've played WoW. Now a days there is very little in terms of buttons in the game itself. Everything has been simplified more or less. Example in this video. https://www.youtube.com/watch?v=eZf3JstrAXE
just keybind f1,f2,f3,f4,f5,1,2,3,4,5,6,q,e,r,t,f,g,h,\,z,x,c,v,b I personally hate the shift + key.
They are all central keys and should fit everything with a low cd.
if it interests you, on Bard I do:
Songs = F1-5
Buffs = 1-5
main gcds = q,e,r,t,v
bloodletter = f
the rest, goes just around those.
I laughed a little a this. MCH don't have a lot of buttons, you funny. Ignoring the 2 CC only skills (which you should be using anyways for cutting animations) I am using a good 30 or so of those buttons on my bar. Not only that, MCH has some REALLY low cool downs.

Monk so far has been the easiest for me button wise (excluding blm cause OP blm)
1-3 main skills that hit from the back shift 1-3 main skills that hit from the side. 4 and shift+4 for our aoe oGCDs and then all rest on mouse's thumb buttons with shift modifier on one of my thumb buttons. (G900 if I remember the mouse numbe right)

I play on controller on PC. Don't listen to anyone who says SMN. While it's an awesome job, powerful and very fun to play (I love it), it does NOT require the least amount of buttons. In fact, SMN and SCH are the only jobs that require me to shift between three hotbars vs. the two of every other job.
Thanks guys, one of the classes I've checked out (though not on Gale) has been NIN. It's scraping what I can do but the speed makes it feel a bit less ungainly than some other classes. I'm still always interested in knowing people's thoughts on what classes are fluid and not too overly complex.
This question was bound to be asked. I have very small hands naturally, add to that the fact that I have some nerve damage in my hands and my comfortable range of motion doesn't match up to other folks. This IS the first game where that's actually been a handicap for me. I play end game in Elder Scrolls Online, Guild Wars 2 and was a mythic raider for a while in WoW and performed very well in all of them. FFXIV is juuuuust stepping outside what my hands can do.
