I don't disagree, but that's kind of an unfair comparison. Your list from FFXI contains ~5 years and 3 expansions worth of stuff.

Even the people who arent bored of the game are actually bored of the game. Know why? They're here on the forums arguing with people instead of playing the game. I came into arr very late. I dont remember patch number but the loot lockout for syrcus tower had just been removed. So I guess I was spoiled by the amount of content that was already available to me.
Personally getting a little impatient for 3.1. Have currently killed ravana ex 30 times with no intention of using the tokens. Why? Its the closest thing I have to "endgame". I wish more random players were willing to attempt savage alex. Yea well wipe a bunch but didnt we wipe a bunch learning bis and rav (ok not u elites but normies like me did). How is this different? Sure beats continuing the ravana slaughter.
Crafting and gathering: never enjoyed it much pre heavensward. And with the current system I have yet to find a single person who has said "I like the new scripts system". Even people that have no 60 battle class, pure doh+dol usually dont have anything nice to say about it.
I think it was a mistake to hold back the relic quest till 3.1. I think far fewer people would be bored if we atleast had the relic grind to work on. Something other than eso capping for battle classes to work for. If the new relic starter weapon/item is locked behind a large tombstone requirement just to start the quest I think ill be done.

I suppose. I judge a game on whether or not it can hold my undivided attention. If I have time to watch a movie and post on forums while simultaneously playing I dont feel that is a game worth playing ie boring. But thats just my opinion.
You must have not dealt with extended DF queues or waiting for nodes to pop. I drift to youtube or play on my Wii U while waiting. As "fast" as FF14 can be, there's still gonna be some amount of waiting involved.
