Because you're most likely still at the same iLvl as you once were before. You get 5 stat points going from 50 to 60. The only thing naturally increasing is your base HP and MP values. Gear means everything pretty much.
A one point, someone reported that bosses seem to get some sort of "crushing blow" damage boost when players went into uncapped coil. I believe someone reported bosses hitting for something like 10% harder than normal versus a level 50 player? I dunno if that's been confirmed or not, but I do recall reading that.
Also, be warned that your Fairy actually get WEAKER as you level, and this is an intended design by S-E.
Not entirely true, your also get a very minor boost to all your stats as well, though it does indeed pale compared to the massive stats you get for increasing your ilvl.

I'm pretty sure this just has to do with stat scaleback being applied to your >50 calculations. Depends more on your gear than your level. If you are using what ever gear you have from HW, your healing is probably on par with pre 3.0 BiS gear or just a little under considering 2.0 final BiS gear is still viable up until around 57.
Side note, fairies don't get weaker. They just don't scale the way we do so their healing output increases very margionally in comparison.

A level 51 tank, in the same gear, will take more damage than a level 50 tank. Also, my own experience, but I started missing a lot more when my tank hit 51.
That said, by the time you get ilvl gear, level 50 stuff should be much easier unsync'd (has been in my own experience).
If your tanks are level 60 in ilvl gear, well, your heals are doing very little compared to their max HP.
Actually this is kinda generally true. Think of this patch as pretty much a reset to 2.0, just with different numbers.

Anyone but myself think that based on the fairy skill/spell progression, starting at lvl 20, that the fairies should get a lv 60 skill/spell? Like Eos getting an AOE heal or physical def up aoe. Maybe Selene getting an aoe enhancement that assist dps like aoe acc up or aoe enfeeblement like blind.
