Thunderbolt eel are the best and seem to come up pretty often for the turn in. 10pm ET - 3am ET Iron Feast in forelands. You can either mooch them from shrimp or catch them straight from bladed steel jigs, I personally use the jigs.
My current stats are 656g and 645p This is with HQs and overmelding

I only collect red/blue scripts with fishing because that's the only gathering I have at 60 ... I make great life choices.

yeah that was my bad. it was my my btn/mnr set. its 550/435, thought i had switched to fsh when i posted didnt even bother to see that it was way off. But it's still melded gear, and you don't HAVE to be super high to get eels. they're 0 star
As usual its all RNG. I can go 2-3 fishing periods and get no Eels... but then i'll get 4-5 in a row!!
I have tried using mooch and the jig. One method is no more better than the other. You do burn less GP with the jig if you're using Patience + Powerful but you almost guarantee you'll get a Eel if you do choose to use the mooch method. The only problem is you will get less ( have to wait for GP ) and sometimes the fish will get away anyway.
PotatoGirl is right. The Eel is your best option. The other fish ( I have yet to see anything besides the Eel and Loosetongue? ) is a rarer, weather dependent big fish.... in other words not worth your time.
Just don't give up guys.
Tip with the tiny axotols (or however you spell it), buy brute leeches with blue scrips to fish these up, they give you a 50%+ catch rate. Combined with use of patience and cordials, i get 6+ of these fish at high enough collectability rating to turn into red scrips per 3 hour fishing window. (Pappus tree, Aszy Lla, 9pm-midnight) in game time.
My personal best was 105 red scrips in 1 window of Thunderbolt Eels (9 catches large enough) between 10pm and 3.30am. Stonefly Nymphs to mooch off Blueclaw Shrimps, using Patience, and then Precision Hookset on the shrimp, then Powerful Hookset on the eel. And of course, as many cordials as you can get off.
That was best case scenario. Usually, I catch around 6 per window, averaging out around some 70 red scrips.
