Matt plays the game quite a bit it seems when he is off work. Of course the FFXIV team will not say their character names or servers, imagine all the spam and harassment they would get every time they log on >.>. They do play the game though.

Also, the dev team do a lot of work on fixing and balancing the game. I don't see where you get the idea of them not playing the game from, unless you think people can make hotfixes in a second and implement it without maintenance...
